Asian: Stirfry Pork & Vegetables with Hokkein Noodles

Chef John 2nd April 06 for dinner. A very nice stir fry for evening dinner featuring pork, noodles, Asian sauces, stir fry greens, spicy sausage. Mid week it will take 20 minutes. For guests it will take longer of course. Goes great with fresh cheese/greens/fruit/coffee to follow. Recommend delicate dry white or red wines.

Asian: Stirfry Pork & Vegetables with Hokkein Noodles

SATISFIES: Four assuming crunchy bread, beverages and dessert. To bulk up add an extra 100 gm pork and extra stir-fry vegeables e.g. sliced capsicum, broccoli, bok choy, whatever you like.

INGREDIENTS

Chilli, garlic, white pepper
Olive oil, sesame oil
Dark soy sauce, teriyaki, fish sauce
Chichen stock (e.g. crumble then stir chicken stock cube into 150 ml cold water)
One salad onion (or ordinary onion)
Bunch shallots
Snow peas: 150 gm approx
Lean pork: 250 gm approx--sliced or cubed (depending what's on special)
Hot salami: 100 gm approx--sliced
Fresh button mushrooms (twenty or more--smallest you can get by ferreting in the case in the market)

PREPARATION

Finely chop the onion and put with sliced/diced pork in a large bowl
Add good splodge olive oil, splash of dark soy, splashes of teriyaki sauce and fish sauce, splash of sesame oil
Add a good quantity of sliced & crushed garlic plus sprinkles of white pepper
Stir and allow this marinade mixture to stand for 1/2 hour.

Make a pile of shallots (cut to 1-2 cm lengths), three large cloves of garlic (chopped to very small pieces), button mushrooms (whole - don't slice)

De-string snow peas by hand, snap in half and put in a bowl.
Add cold chicken stock and stir.
Put the Hokkein noodles into warm water, gently separate, drain and add to the bowl of snow peas and stock. Set bowl aside.

COOKING

Put 1 tbsp olive oil and 2 teaspoons sesame oil in wok. Heat to highest. When oil is hot add the bowl of marinated pork, oils, sauces etc. Turn constantly with a teflon spatula for 2-3 minutes (depends on heat). Then add pile of shallots garlic, mushrooms etc, plus splashes of fish sauce and sesame oil. Fold in with spatula and keep turning for 1 minute or so on highest heat. Add bowl of noodles, snow peas & stock. Stir gently until hot. Serve straight away.
